“My kids call these soccer muffins ~ they were often part of a quick supper before a game.”
1 cup quick cooking rolled oats
1 cup buttermilk
1 egg
1/2 cup brown sugar
1/2 cup vegetable oil
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
Mix all ingredients together and spoon into greased muffin tins. Bake at 40o° for 15-20 minutes.
Makes 8 – 12 muffins.
