“Very filling and slightly sweet. Good with apple sauce or syrup.”
1-1/2 cups oatmeal
2 cups buttermilk
2 eggs
1 teaspoon vanilla
3 tablespoons oil
2 tablespoons brown sugar or maple syrup
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon baking soda

Stir oatmeal into milk. Let stand 20 minutes. Beat eggs, vanilla, and oil. Add to soaked oats. Combine dry ingredients. Add to oat mixture. Cook over medium-low heat until tops are covered with holes. Flip and cook other side. Because of the high moisture in this batter, the pancakes need to cook slowly.
Soured milk can be used instead of buttermilk. To make sour milk, use 1 tablespoon lemon juice or vinegar and add enough milk to make 1 cup.
