Help us honor Katie’s family’s request for her favorite treats to be served at the luncheon following her Celebration of Life on May 10. Here are the recipes for some of her best-loved cookies and bars:
Pumpkin Bars
2 cups sugar
¾ cups oil
4 eggs
15 oz can pumpkin
½ tsp salt 1 tsp soda
2 tsp baking powder
2 cups flour
2 tsp cinnamon
1 tsp nutmeg
Cream sugar and oil, add eggs then pumpkin. Mix dry ingredients together and add slowly to pumpkin mixture. Spread in a greased and floured 10 x 15 x 1 inch pan. Bake in a 350° oven for 27-30 minutes. Spread with frosting when cool.
Frosting:
3 oz cream cheese
½ cup butter
2 cups powdered sugar
½ Tbls milk (add milk only to achieve correct consistency)
½ tsp vanilla
Almond Bars
Crust:
1 cup butter
2 cups flour
1⁄2 cup powdered sugar
Filling:
1 (8 oz) pkg cream cheese
2 eggs
1⁄2 cup granulated sugar
1 tsp almond extract
Frosting:
1 1⁄2 cup powdered sugar
1⁄2 cup butter
1 tsp almond extract
1 1⁄2 tbsp milk
sliced almonds
Directions:
Mix together butter, flour and powdered sugar and pat into 9 x 13” pan. Bake at 340° for 20-25 minutes.
Mix cream cheese, eggs, sugar, and almond extract with electric mixer. Pour over crust while still hot. Bake another 15-20 minutes at 350°.
Let bars cool and beat frosting ingredients and spread on bars. Sprinkle sliced almonds on frosting. Store in refrigerator or freeze.
Mrs. Fields Chocolate Chip Cookies
1 cup butter
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups flour
2 1/2 cups oatmeal (put in blender and make into flour—2 1/2 cups before blending)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 oz bag chocolate chips
1 1/2 cups chopped nuts, any kind
Preheat oven to 375° F
Cream together butter, sugar, and brown sugar.
Add eggs and vanilla and mix well.
Add flour, oatmeal powder, salt, baking powder, and baking soda.
Stir in chocolate chips and nuts.
Drop by golf ball-sized balls onto ungreased cookie sheet.
Bake at 375° for 6-10 minutes.
Makes about 4 1/2 dozen cookies
