3 medium zucchini, cut thin (4-5 cups)
1 large onion, chopped
1-1/2 pounds ground beef
1/2 teaspoon salt
1/8 teaspoon pepper
1 6-ounce package stuffing mix
1 cup grated carrot
1 can cream of chicken soup
1 cup sour cream
Cook zucchini and onion in small amount of water for 5 minutes. Drain. Brown meat and season. Prepare stuffing mix as directed. Spread 1/2 meat in greased casserole. Top with layer of stuffing mix. Combine carrot, soup and sour cream and fold in zucchini and onion. Pour over stuffing and add remaining meat. Top with remaining stuffing mix.

Bake at 350° for 45-50 minutes.
Serves 6 – 8.
