“I always have my mom make this for my birthday dinner.”
1 cup uncooked rice
1 can whole-kernel corn, drained
Salt and pepper to taste
2 8-ounce cans tomato sauce
3/4 sauce can water
1/4-1/2 cup chopped onion
1/4-1/2 cup chopped green pepper
3/4 pound ground meat
4 strips bacon, halved or cut in smaller pieces
Place rice and corn in layers in a 2-quart baking dish. Season with salt and pepper. Pour 1 can tomato sauce and 1/2 can water over layers. Add layers of onion and green pepper. Cover with a layer of seasoned ground meat. Pour remaining can of tomato sauce and 1/4 can water over top. Top with bacon slices. Cover; bake at 350° for one hour. Uncover and bake for 30 minutes longer.
Makes 6 servings.
To lower fat, fry beef and bacon lightly and drain before adding.
