“I’m submitting this recipe in memory of JoAnn Borgfelt, my friend of 50+ years. This casserole was her recipe. We and our husbands played bridge nearly every Friday night for more years than we can recall. We would take turns hosting and making supper. I know this was made often.”
1/2 cup uncooked rice
1 cup cubed ham or Spam
1 cup frozen peas
1 cup cubed cheese
3 eggs well beaten
1-1/2 cups scalded milk
1/4 cup melted butter
1/2 teaspoon salt

Cook rice. Add other ingredients. Bake in a buttered casserole set in a shallow pan of water at 350° for 1 hour.
