5 cups boiling water
6-1/4 cups instant potato flakes (Hungry Jack)
2 teaspoons salt
1 heaping tablespoon sugar
1/2 cup vegetable oil
1/2 cup evaporated milk
3 cups flour
Mix boiling water and potato flakes. Mixture will be quite firm. While still hot add salt, sugar, oil, evaporated milk and stir well. I usually make the mix the night before baking and let it cool overnight at room temperature.
In the morning just before baking, add the flour and mix well with the hands. Measure 1/4 cup of the mixture and form into a flattened ball or patty. I usually get about 26 patties which makes 26 lefse. Roll out each patty as thin as you like using a generous amount of additional flour.
Bake on a lefse griddle and enjoy.
Stack the lefse as you bake and wrap in a thick towel so they steam and cool slowly. Then enjoy!
