1-1/2 cups warm water
1 package yeast
2 tablespoons sugar
3 cups flour
1 teaspoon kosher salt
Oil
Egg Wash:
Egg whites
1 teaspoon milk
Mix warm water and yeast, plus sugar; and proof. In large bowl mix flour and kosher salt. Stir in warm water and yeast with wooden spoon and add more flour to form a ball. Knead till elastic. Coat with oil and put in bowl covered with plastic and let rise 20-30 minutes. Punch down, rest 5 minutes. Form doughnuts and place on parchment lined cookie sheets. Cover and rest 20-30 minutes. Will not rise. Heat water to boiling in large pan. Drop bagels into ware and turn 30 seconds.

Mix egg wash and brush over bagels.

Bake in 375° oven 20-25 minutes.
To make other flavors add 1 teaspoon cinnamon, 1/2 cup raisins to flour and knead.

You can replace honey for sugar in yeast. I sprinkle sesame seeds, poppy seeds or garlic. If making with wheat I use 1/2 white flour and 1/2 whole wheat. Or I add wheat germ a little at a time while kneading dough.
