Heavenly Rice Pudding

Pastor Mark has eaten ALOT of rice pudding, and this is his favorite!
3/4 cup raw rice
1 quart whole milk
2 eggs, separated
3/4 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 tablespoon butter
Wash rice. Cook in boiling salted water for 5 minutes. Drain. Put into top of double boiler with 2 cups milk. Cook until milk is absorbed. Add 1-1/2 cups more milk and cook until that is absorbed. Beat egg yolks with 1/2 cup milk, 1/2 cup of the sugar, the vanilla and salt. Add to rice and cook only until creamy. Add butter. Remove from heat. Pour into buttered casserole. Top with meringue of 2 egg whites beaten with 1/4 cup sugar. Brown lightly in oven, 10 minutes at 350.
